1. Prepare the Fish with Salt, Black Pepper, garlic, olive oil and a little bit of lemon. Grill the fish in a non-stick pan hot. No need to add any fat.
2. Peel and cook the sweet potatoes in salted water. When the potato is well cooked, drain water and return potatoes to pot. Knead well or run through a wringer.Season with salt. Add a bit of the butter spray and mix well. To achieve a very fine texture and creamy coat put everything on a food processor.
In a large pan, spray the Butter and add the chopped garlic. Mix the butter using a fork, so the aroma of garlic will penetrate the spinach without getting a very strong flavor.
Add the spinach leaves, season with salt and pepper. On low heat, cook the spinach until wilted and stirring constantly the garlic with a fork.
In a large plate, place a portion of steamed spinach on top and add a portion of mashed sweet potatoes. Accommodate a fish fillet on top. Finish with a drizzle of olive oil and lemon drops.
